Baking Bread
This course offers two units of instruction, a five-part video series on baking multi-grain whole wheat bread using a biga starter and written instructions for baking an artisan white bread. Both recipes are time consuming but there is a lot of down time to do other things while you're waiting on your dough. This course reviews the ingredients and kitchen tools needed for both recipes, as well as techniques for mixing, shaping and scoring bread dough.

The multi-grain recipe takes about a day to complete. Some ingredients must be mixed and allowed to sit at room temperature overnight for 16 hours in advance of preparing the final dough. After that time, it will take about five hours to complete the process. The white bread recipe takes about five hours to complete from start to finish. These recipes could be made simultaneously to save time as both have significant down time.
